Just use your deciphered charts for the area that you need them. Push up on the D-pad while sailing, go to your charts, find the one you need for a certain area, and exit. As you get close to the spot, hit up on the D-pad and it should already be set up. If not, do the first part over again. When you're over top of the spot, grab it!
