Well, there are 2 kinds of Poes:
Normal Poe - when you defeat a Normal Poe ghost, it will leave behind a Purple Spirit that you can put in a Bottle, but they don't do anything, so don't bother putting them in a Bottle.
Big Poe - when you defeat a Big Poe ghost (only found in Hyrule Field, only as an Adult and only while riding Epona) by using Arrows, it will leave behind a Yellow Spirit, make sure that you DO put them in a Bottle.
There are only 10 of them scattered across Hyrule Field.
When you catch one, take it to the Ghost Hunter guy in that room before entering the Market, if you find all 10, you'll get another Bottle!

Purple Poe (the spirit when you are a kid) can replenish your heart life. Be sure to catch them in bottles so you can stay alive in battle!
