What is the best team of Pokemon that I could possibly have. I only need 4 more Pokemon because I already have Espion and Umbreon

Well that's all entirely up to you really, as you progress through the game you will encounter a lot of shadow Pokemon and make sure you catch them all because they will become handy and you will be able to obtain Ho-Oh (That's when you obtain all shadow Pokemon and purified them. Also beating the Battle Mode with your coliseum party).
It depends on what part of the game you are on. If you are on story mode, I would recommend quilava, bayleaf, or totadile. If you are trying to get ho-oh, I would recommend legendaries (if you have ah GBA game and a GBA/gamecube cable, I would reccoment transfering legendaries from the gba game, because, those are typically a higher level).

Honestly it doesn't matter as long as your Pokemon are high enough in levels. But if I had to choose I would pick:
Espeon: Psycic, Light-Screen, Shadow Ball, Reflect.
Umbreon: Toxic, Confuse Ray, Bite, Spot.
Feraligator: Surf, Ice Beam, Slash, Rain Dance.
Ampharos: Thunder, Thunder Bolt, Thunder Wave, Spot
Entei: Flamethrower, Solar Beam, Sunny Day, Spot.
Flygon: Earthquake, Dragon Claw, Fire Blast, Crunch
