How do you get past the broken pieces of bike track

You need the Acro Bike. If you chose the Mach Bike, you can simply go to the Mauville Bike Shop and have Rydel swap them for you. When you're on the "broken" track with the Acro Bike, simply press B and the direction you need to go on the Control Pad simultaneously.
