OK, good water types. Im going to assume youre only in the hoenn dex. Starmie, Milotic, kingdra, ludicolo, tentacruel, walrein. Those are probably your best bets. As far as fire types in the hoenn dex there is nothing too special.

Camerupt, torkoal, magcargo, and ninetales. Out of those ninetales is the best, but blaziken is better. If you have the national dex you might want to think about houndoom.

I would suggest Azumaril with some powerful moves taught to it like ice beam and such.

Water types-gorebyss or huntail, lanturn, starmie, ludicolo, walrein, quagsire, etc
Fire types-torkoal, camerupt, maccargo, ninetales, etc

All suggested so far are great but after getting the super rod, fish in the middle of the waters near the day care and get corphish. Its a great water type when evolved into crawdaunt which is water/ dark. Shadow ball/ blizzard/ ice beam, surf, waterfall and crab hammer are good move sets. Camerupt is a great fire type if you didn't get torchic to start. It learns earthquake and great fire moves

Crawdaunt can't use Shadow Ball. I tried to teach it to him but he can't learn it!

For water types, it depends. If you want a physical tank that can take a lot of hits, choose wailmer or tentecool. If you want a sweeper that has high speed and special attack choose kingdra/huntail. If you want a jack of all trades, Corphish and gorebiss are the ones for you. It's all about what Pokemon you already have, and what they're best at doing. Weather it's sweeping or defense, you gotta balance it out. By the way, for most of these I put first evolution forms, make sure to evolve it if you can.
