Does a Pokemon keep trying to evolve each time it levels up after it's passed the level it evolves at?

Yes, of course it does! It would kinda suck if you accidentally pressed the button to stop your Torchic from evolving and then were stuck with a Torchic for the rest of the game.

BUT, the pokemon will never evolve as long as it's holding an everstone.

Why, of course! So don't worry about the Exp Share! However, if you have a Pokémon on its preliminary stage and it evolves on a level that its evolved form was supposed to evolve itself on, the second form will not evolve immediately afterward. For example, if you got your Wurmple to level 10 before it evolved into Silcoon or Cascoon, it would evolve into one of those Pokémon, but that Pokémon wouldn't evolve into their next form immediately after the first evolution is complete. To acquire the stage after, you just have to grow it another level.
