Compounding is available through the Salve-maker job and will require you to combine two items. There are 89 possible combinations in the game. Unfortunately, you can only combine items during a battle.

You can view the combinations you've unlocked in D's journal. This section will list the items and the combinations you can unlock through compounding. If the item you unlocked in compounding has several other combinations, they will be listed in the Encyclopedia as well. That said, I'll only list the basic combinations to unlock them.
