Question for Sonic Dash 2: Sonic Boom

I have an option to evolve my sprite. That being said, I don't want to use something I will need and I'm not sure what actually happens when I evolve the Sprite. I've searched the web and cannot really find any advice except it exists. More details on the how and some examples would be great.
