One challenge asks you to level up twice in a game. How can this be done when you are level 20 already?

Begin a game when you have almost levelled up and use the smash hit ball. You'll go up 2 levels!
You need the Smash Hit ball. Enter the tournament when you are very close to leveling up. Bowl a strike to level up twice.
An option that'll take a little bit of time to do:
Start the first round right before leveling up, getting the first level up within the first couple frames/first game.
Next, use the daily spin to get xp, while playing multiplayer games to get more xp (you can play Multiplayer without forfeiting a single player game).
Once you're close to leveling up again, resume the single player game and level up. It'll take a day or two but it's definitely possible at level 20 and no fancy balls/gold pins.
Then you’ll just level up again and get more levels and getting a strike is the best
Use the smash hit ball for this challenge, make sure your final frame you get a strike or it won't complete the challenge.
