2 of the missions involve collecting seeds and petals. . How do I collect/catch them?

Grab a butterfly and swoop it to cross the path of the petal.
It will then be collected.
When you see the seeds fly a butterfly over it then use the butterfly to collect the seeds by flying ovee them, same for the petals
To catch seeds and petals you only have to guide any one of your butterflies to intercept them. The petals are a Little bit different than the seeds however. .. With the petals..you have to intercept it 4 maybe 5 times .. By intercept I mean a butterfly has to make contact with it. . And you will know when it is complete because you will receive one flutterbuck.
When you see a floating pink flower petal fly into it with a butterfly. You can fly into it 4 to 5 times, the last time it will give you a flutterbuck. The first several times it will give you honeydew drop coins. It doesn't matter if you use the same butterfly or different ones, you will get the same results.
