How do I kill the moblins? Because when I go behind them they turn around and spear me.

Use your Hookshot. You can either wait until one walks into view and shoot it, or you can play the Scarecrow's Song and get on top of the maze by shooting the scarecrow with the Hookshot.
One shot from the Hookshot will kill all except the Great Moblin at the end. The Longshot and Bow also work. You should also be able to kill them with a sword if you wait just around a corner.
The Great Moblin can be killed with the bow. However, because you do not have the bow when you first encounter it, you must adopt a different strategy. Run at the Great Moblin, periodically switching from one wall to the other to avoid it's club. Once you get behind it you are safe and can slay it with your sword.
