I like offensive, fast yet bulky (doesn't have to be EXTREMELY bulky, but can take some hits) Plus good magical and physical defenses.

Well there isn't one class that can cover all of that but for quick movements and a good offensive with some bulk, I suggest either a paladin or great knight.
I'd say dread fighter from the DLC lost bloodlines 2. It's fast, has physical and ranged weapons, (Sword, Axe, Tome) has insane res, and high speed.
Personally a sorcerer at max level, because they are OP only slightly underpowered for the last story fight
