While racing on Maka Wuhu, slow down before the first tunnel. You should see an opening to the right where the fence meets the tunnel.

Turn around and drive off the edge into the lake. Lakitu should then pick you up, placing you near the third checkpoint, effectively cutting off much of the lap!
